Honey pie with sea urchin, crab mushrooms and squid from the future: Moscow cuisine participated in the Madrid Fusion gastronomic festival in Spain

Moscow cuisine was presented at the Madrid Fusion gastronomic festival, which is currently being held in Madrid. Ivan and Sergey Berezutsky, chefs of the Moscow restaurant Twins Garden, held a workshop with the support of the capital's Tourism Committee and the Discover.Moscow tourism portal.

On 13 January, in the 250-seat main hall of the festival, Ivan and Sergey Berezutsky spoke about Russian culinary traditions and their approach to cooking. The topic of the seminar was 'Water': the chefs showed how they use its various states using several dishes as an example. The workshop menu included: scallops with cured fatback and guelder rose, crab mushrooms with mushroom wine, honey pie with sea urchin and yellow tomatoes, and 'Squid from the Future': a new dish created especially for the festival.

'We are very happy to take part in the world's gastronomy festival and to represent Moscow because, for our capital, gastronomy is a cultural heritage to be shown to the whole world. We are happy that there is a huge interest in Russian cuisine, as the full hall at Madrid Fusion shows. For us, the best result of our participation in the festival is the fact that we caught the interest of all the people who attended our workshop, and now they would like to come to Moscow', the Berezutsky brothers noted.

This year, the Madrid Fusion international festival was held for the 18th time. More than 300 professionals from all five continents, including cooks, confectioners, bakers, enologists and sommeliers, gathered in Madrid. The topic of this year's congress is: Essential Cuisine: Conscious Simplicity. In the various venues of the festival, the industry experts discussed the role of Instagram in the restaurant business, AI, allergies and intolerances, the possibility of creating non-sweet dishes with sweet ingredients, neuromarketing in gastronomy and other culinary trends. Cooks from all over the world participate in workshops, contests, auctions and awards. This year, the cities invited to hold workshops at the most authoritative gastronomic congress include Tokyo, Moscow, Saint Petersburg and Cape Town.

The Madrid Fusion gastronomic festival takes place on 13–15 January 2020 in Madrid, Spain. It is one of the world's largest gastronomy congresses, with the participation of the best chefs, unique workshops and seminars, and in the exhibition area, you can taste exclusive food from all over the world.

In 2019, Madrid Fusion had over 13,000 visitors, and 122 speakers participated in the business programme. On the event dates, the official festival website had about 319,000 visits.
